Vineyard 7&8 is located at the top of Spring Mountain and features eight acres of Cabernet Sauvignon. Together with the topography of the region and the architecture of the winery, Vineyard 7&8 produces the "Estate" Cabernet Sauvignon and "Estate" Chardonnay from their own vineyards on Spring Mountain. However, it's the "7" Cabernet Sauvignon that our estate sommelier, Sean Meyer, recommends as the wine of the month.
"This wine has a profound strength and depth of a typical Napa Mountainside Cabernet but retains a beautiful frame of natural acidity which makes it and excellent choice for those rich braises and other rich fall fare," says Meyer.
Region: Spring Mountain (Napa Valley)
Pairs well with: Braised Beef Short Ribs, Broiled Steaks
Why it's good for fall: We have moved into a cold and rainy season here in Napa which always has me thinking about ways we can use our oven more often to take advantage of its radiated heat. A good braise is the perfect way to shake off a fall chill. This wine has a profound strength and depth of a typical Napa Mountainside Cabernet but retains a beautiful frame of natural acidity which makes it and excellent choice for those rich braises and other rich fall fare.
